The craft beer is mostly Aier process. The yeast works at the top of the fermenter and floats above the liquor. The fermentation temperature is generally controlled at 10-20 °C. The fermenter is usually small and is not filtered and sterilized after the end of fermentation. The industrial beer is mostly the Lager process. The yeast works at the bottom of the fermenter and sinks under the liquor. The fermentation temperature is generally controlled below 10 °C. The fermenter is larger, and after filtration, filtration and pasteurization are usually used to increase the shelf life of the beer.
3, different fermentation time
The fermentation time of craft beer is often not specially considered. The most traditional craft beer fermentation time can be as long as 1-2 months, so that the beer is fully fermented, the wort concentration is higher, and the flavor is more intense. For example, Taishan puree beer is imported from German yeast, which is fermented for 60 days. It uses instant sterilization to retain yeast activity and bring fresh taste. Industrial beer usually has a fermentation time of about 7 days, low concentration of wort and light flavor.
4, save time is different
Most craft beer is not filtered. Therefore, most craft beer has a short shelf life and some shelf life is only a few days. For example, Taishan is committed to producing beer with a short shelf life, ensuring that every bite that is consumed is fresh puree beer; industrial beer will be filtered and pasteurized in the later stage of fermentation, with a longer shelf life.
5, different styles and nutritional values
Craft beer usually has more types and quantities of malt, yeast and hops, and the variety of styles produced varies. These craft beer have a strong aroma, high content of wort, thick and full taste, higher nutritional value; industrial beer brewing process and style, coupled with short fermentation time, low wort concentration, less hops and The characteristics of low alcohol content, its natural nutritional value is not high in craft beer.
